摘要
测定了皱果苋、薄荷、车前、马兰和蒲公英5种野菜的硝酸盐、亚硝酸盐、Vc含量和抗氧化活性,结果表明:5种野菜的硝酸盐含量分别为169.81,79.54,131.63,136.24,50.22 mg.kg-1,亚硝酸盐含量分别为2.69,0,1.58,0.79,2.96 mg.kg-1,均未超过根据FAO/WHO规定的ADI的计算值;薄荷、车前和马兰符合我国制定的无公害蔬菜对亚硝酸盐的限量标准,皱果苋和蒲公英略微超过这一标准;薄荷、车前的醇提液对超氧阴离子自由基的清除作用明显高于皱果苋、马兰和蒲公英,薄荷还具有较高的SOD活性.
The contents of nitrate, nitrite, Vc and the antioxidant activities in Amaranthus viridis L. , Mentha haplocalyx Briq. , Plantagoasiatica L. , Kalimeris indica (L.) Sch. -Bip. and Taraxacurn mongolicum Hand. -Mazz. were determined. The results indicated that the contents of nitrate and nitrite in five edible wild vegetables are lower than the critical content of ADI. The content of nitrite in Mentha haplocalyx Briq. , Plantago asiatica L. , and Kalirneris indica (I..) Sch. -Bip. reaches the standard of unharmful vegetables, but Amaranthusviridis I.. and Taraaacum mongolicum Hand. -Mazz. do not reach that standard. The percentages of ·O2^- scavenged by the alcohol extracts from leaves of Menthahaplocalyx Briq. and Plantagoasiatica L. are higher than that of Amaranthusviridis L , Kalirnerisindica (L.) Sch. -Bip. and Taraxacum mongolicum Hand. -Mazz.. The activity of SOD in Mentha haplocalya Briq. is high also. These results showed that Mentha haplocalyx Briq. has good quality.
