摘要
利用自制直流高压静电场装置对啤酒酵母进行杀菌实验研究。结果表明:电场电压、处理时间是影响电场杀菌作用的主要因素。在极板间距3cm,电压3kV,处理时间3min的条件下,啤酒酵母的致死率达到99.1%。使用显微照相技术和电镜技术,初步分析了高压静电场下啤酒酵母的杀菌机理。
In this sterilization experiment research, beer yeast was treated by high voltage static field device of direct current. The result indicated that, electric field voltage and the process time are the primary factors that affect the eleetrie field sterilization . In polar plate 3 cm of interval, 3 kV of voltage dealing with time under the terms fnr 3 rain, the lethality rate of beer yeast achieves 99.1%.
