摘要
本文介绍了我国荞麦的品种资源、荞麦的营养成分,其中包括氨基酸、维生素、微量元素的分析结果,论述了荞麦的生理功能和食疗价值。综述了我国荞麦的研究开发现状,介绍了荞麦系列产品的加工技术。
his paper introduces variety resources of Fagopyrum in China, reports analytical results of Fagopyrum nutrient components, including amino acids, vitamines and trace elements. It also discusses physiological functions and medical value of Fagopyrum. The author gives a general review of the latest progress in studies of Fagopyrum and its exploitation in China.
