摘要
介绍了以菠菜为样品,采用冷冻干燥技术,生产菠菜蔬菜纸的生产工艺和参数。菠菜经过预处理成浆后,菠菜预冻温度为-25℃,冻结4h;冷冻干燥的压力设在10 ̄20Pa;解析干燥温度设定在29 ̄38℃;菠菜纸残余水量在3% ̄5%时为宜。
The processing method and parameters of spinach flake by freeze-drying technique were introduced. After pre-treatment,the spinach slurry was frozen for 4 hours at -25℃. The vacuum pressure was between 10Pa and 20Pa, and the temperature for desorption drying at the range of 29℃ and 38℃; The result suggests that it was best for the flake to contain water between 3% and 5%.
