摘要 研究了加压条件下油菜籽中硫苷非酶降解规律,探讨了硫苷非酶降解机理。 The non-enzymatic degradation profile of glucosinolate in rapeseed under pressure thermal treatment was studied, and the related mechanisms were discussed.
