对经耐氧驯化的双歧杆菌用正交实验法研究不同菌珠、接种量、牛乳固形物浓度、初始ｐＨ值和培养温度与牛乳发酵后菌浓度、发酵酸度的关系，找出最佳的双歧杆菌牛乳发酵条件。

In order to optimize cow milk fermentation conditions using Bifidobacteria oxytolerant trained,the effects of some factors on the cell concentration and acidity of the cultured products were investigated.These factors considered included:different strains,inoculum,concentration of substrate,initial pH level and culture temperature.The fermentation process was also examined.
