几种脂肪酶作用pH与温度比较研究 被引量:4

摘要 对三种不同来源的微生物脂肪酶作用pH、温度、热稳定性进行了研究。研究结果表明:脂肪酶A最适pH为6左右,酶B和酶C均为7.0~8.0;脂肪酶A和C最适温度为30℃,酶B为40℃; The reaction pH, temperature and thermal stability of microorganism Lipases, coming from three different sources, are studied. The optimum pH of Lipase A is 6, approximately, while that of Lipase B and Lipase C are 7.0~8.0. The optimum temperature of both A and C are 30℃ while that of B is 40℃,It shows that the thermal stability of Lipase B is much better than that of the others.
