简述了甜味剂呈味机理的研究历程,着重介绍了AH-B-X理论和多点结合理论及其在三氯蔗糖研究中的应用,并指出了研究甜味机理的意义,为寻找和合成新型的人工甜味剂提供了理论依据和指导.
The development of the mechanism of sweetness was introduced. Especially, the three-point attachment theory, the multipoint attachment theory and their applications in sucralose were expounded. The study on the mechanism of sweetness was important and instructive to explore and synthesize novel intense sweeteners.
