摘要
【目的】稳定性同位素分析是用于产品产地溯源的一种有效技术,在食品安全追溯制度建设中有重要应用价值。本研究探讨了牛不同组织中稳定性碳同位素组成特征,以及牛的品种、饲料对牛组织中δ13C值的影响,旨在为牛肉产地的同位素溯源技术方法的建立提供理论依据。【方法】采用MAT253型同位素比例质谱仪(IRMS),测定了牛尾毛、脱脂牛肉、牛肉粗脂肪的δ13C值,并进行了相关性分析。【结果】牛尾毛、脱脂牛肉、牛肉粗脂肪的δ13C值依次递减的顺序为牛尾毛>脱脂牛肉>牛肉粗脂肪,三者之间的相关性达到极显著水平;饲料对牛组织中碳同位素组成的影响远大于牛品种对它们的影响;牛不同组织中稳定性碳同位素组成取决于主膳食的构成和成分,浓缩饲料、添加剂等少量成分对它们的影响很小。【结论】牛组织中δ13C值是表征牛主膳食构成及追溯牛来源地的一项重要指标。
[Objective] Stable isotope analysis is an excellent tool for origin assessment and is important to food traceability. The carbon isotope composition of cattle tissues is compared, and the effect which cattle species, feeds on them is studied. The aim of the paper was providing the theory basis and methodology foundation which use a stable isotope analysis to trace cattle origin. [Method] The δ^13C values of cattle hair, de-fatted muscle and muscle crude fat were tested using isotope ratio mass spectrometry (IRMS) MAT253, and the correlations between them were analyzed. [Result] The tissues δ^13C values decreased from hair〉defatted muscle〉muscle crude fat, and the pairs δ^13C values between them were significantly correlated. Diet composition hada large effect on stable carbon isotope composition of cattle tissues. The stable carbon isotope compositions of cattle tissues mainly depended on staple feeds. Concentrates and additives had less effect on them. [Conclusion] The δ^13C value was an important indicator which showed cattle diets and traced cattle origin.
