2%NaCl TSB及单冻煮蛤肉中副溶血性弧菌生长模型的建立及应用 被引量:14

摘要 我国食源性疾病的发病率较高,其中由微生物引起的食物中毒案例占较大的比例。在沿海地区,夏秋季节的食物中毒案例中,有80%是由于食用被副溶血性弧菌污染的海产品造成的。本研究主要进行了副溶血性弧菌在特定温度下,在2%NaCl TSB及单冻煮蛤肉中生长曲线的测定,并用CurveExpert 1.3软件作为辅助工具,选取了四种模型(Logistic模型、Richards模型、Compertz模型、MMF模型)进行拟合,通过比较得出了最适的生长方程,建立了其在不同培养条件下的生长模型。通过考察副溶血性弧菌在不同环境条件下的生长情况,结合剂量—反应模型,估计了产品污染后在不同储存条件下的暴露时间,对产品的安全消费提出了建议。
