南瓜水溶性多糖提取及抗氧化性能的研究 被引量:18

摘要 探讨了南瓜水溶性多糖提取的工艺条件,采用单因素试验和L9(34)正交试验设计,研究了不同提取温度、时间、次数和料液比等单因素对南瓜多糖提取率的影响。并采用水杨酸法检测羟基自由基(-OH),AP-TEMED法检测超氧阴离子自由基(O-2),研究了南瓜多糖清除.OH和O-2的效果。结果表明,最佳提取条件为:14∶0的料液比,在70℃水浴条件下提取3次,每次提取4 h。抗氧化试验表明南瓜多糖具有较好的抗氧化活性,是一种效果好、安全性高的新型天然抗氧化物质。 The extraction technology for pumpkin polysaecharide and their antioxidant activities were studied. The effect of each factor such as the temperature, the time, the times and the ratio of solid-liquid on the extraction of the water-soluble polysaccharides in pumpkin were investigated using the methods of single factor test and orthogonal design test of L9(3^4). The scavenging effect of pumpkin polysaeeharide on hydroxyl radicals (·OH) and oxygen radicals(O2^-)were tested by salicylic acid method. The result showed that the highest extraction rate of Pumpkin polysaccharide could be obtained with a radio of solid to liquid as 1:40 , 70℃ for 4h and 3 times of extraction. Anti-oxidative results showed pumpkin polysaccharide had the effect of antl-oxidation. Pumpkin polysaccharide was a potential product of natural ,safe and effective antioxidant.
