摘要 高压脉冲电场(PEF)杀菌技术有很好的处理效果,但存在着处理装置成本高、作用影响因素复杂、影响原因不明确等问题,要促进其向产业化应用的发展,必须明确影响机制,促进该技术应用的规范化,保证产品安全性。本文对高压脉冲电场杀菌技术的作用机理、杀菌作用影响因素及相关问题进行了综述与探讨。 High intensity pulsed electric field (PEF) provides effective inactivation of microorganisms. Otherwise, the application of PEF in industrial scale is blocked by the high cost of the PEF equipment, the complexity of influencing factors, and the indetermination of the influencing mechanism. So, it's necessary to confirm the influencing mechanism, the regulation of the PEF, the product safety before the application of PEF in industrial scale. In this paper, the inactivation mechanism, critical influencing factors, and related aspects of PEF inactivation were reviewed and discussed.
