摘要
蔬菜纸产品是一种新型的食品。本文分析了蔬菜纸的研究现状、特点;重点介绍了蔬菜纸的生产工艺以及加工过程中的护色与硫处理、粘结剂的选用、均质工艺等关键问题,最后对其应用和前景作了展望。
The Vegetable Paper is a kind of new food products. This article analyzes the researches status and characteristic on vegetable paper. Some problems such as the technology of color holding, sulphur treatment, the choice of adhesive, the technology of homogenizing are presented. Its prospect and application were predicted.
