为使我国水产品产运销质量管理体系趋于完善,更好地与国际接轨,介绍了美国、欧盟、挪威和日本的水产品安全保障体系,概括了我国目前水产品安全存在的一些问题,如监管体系的薄弱、饲养环境内外源污染的问题等。并针对水产品中的各种危害来源及控制方法做了分析论述。最后就欧盟着力推广的水产品可追溯体系(Tracefish)以及近年来预报微生物学在水产品生产上的应用做了相关介绍。
