摘要 目的通过对无锡市农村93人的膳食调查,了解农村居民的膳食结构,营养素摄入量,肥胖和高血压的患病情况。方法采用称重法、24小时回顾法,调查住户居民3天的食物消耗量,记录家庭成员用餐情况。测量调查对象的身高、体重及血压。结果农村居民热能中,脂肪供热量占总热量的比例达到42.56%,大于推荐供给量标准的20%~30%;油脂、畜禽肉类、食盐摄入明显偏高,维生素A、B1、B2、C和钙摄入量明显不足;农村存在较突出肥胖超重的问题,同时也存在消瘦问题,高血压发病占调查人数的22.56%。结论对农村居民膳食结构不合理状况,必须采取综合措施,加强健康教育和健康干预。 OBJECTIVE To understand the dietary structure and dietary intakes, Adipose, hypertension of rural people in Wuxi. 93 residents were selected, dietary survey was carried out. METHOD He food consumption data were collected for three clays using an inventory change combined with weighing method, Individal intakes were obtained by 3 censecutive 24-houre recalls, Individal body height, body weight, blood pressure measured. RESULT In average of energy intakes in rural resident, fat provided 42.56% of the di- etary energy, that was greater than recommend suppy quantity accouted for 20%-30%. Fat and oil, poultry, meat, table salt were high, intakes of vitamin A Thiamine (BI), Riboflavin (B2), ascorbic acid and Ca were lack seriously in rural residents. Adipose and overweith were present, so was asarcia. CONCLUSION The dietary structure in rural residengs was beyong reason. Comprehensive measures must be taken, health eduction and health intervention will be strengthened.
