摘要
以荔枝壳为原料,分别采用热水浸提法和酸碱法制备水溶性膳食纤维和水不溶性膳食纤维。正交试验结果表明,制备荔枝壳水溶性膳食纤维的最佳工艺条件为:料液比1∶20;水浴温度100℃;pH值7.0;提取时间30 m in;产率为3.45%.水不溶性膳食纤维产率为39.73%,其持水性为4.15,溶胀性为1.25 mL/g.
Lichee shell is used as raw material to extract dietary fibre by chemical method. The optimal conditions to extract water-soluble dietary fibre are studied in orthogonal test. The optimal parameters are as following : stuff-to-water ratio 1 : 20, temperature 100℃, pH7.0, extracting time 30 rain. Under the conditions the extraction rate is 3.45%. The extraction rate of the water-insoluble dietary fibre is 39.73%. The water holding capacity and expansion capacity are 4. 15, 1.25 mE/g, respectively.
