气相色谱法测定食用菜籽油中植物甾醇的组成及含量 被引量:16

摘要 采用毛细管气相色谱法,对不同品种、压榨工艺的3种食用菜籽油中植物甾醇的组成及含量进行了分析。结果表明,3种食用菜籽油中均含有菜籽甾醇、菜油甾醇和β-谷甾醇,均未检测到豆甾醇;其甾醇总含量以双低脱皮冷榨油最高,脱皮冷榨油次之,最低为普通成品油。同时,在所有样品中测出的3种甾醇中均以β-谷甾醇含量最高。 The plant sterol component of three sorts of local edible tape oils as well as the squeezing craft was analyzed and the content was determined with capillary gas chromatography. The result indicated they all had Brassicasterol, Campesterol and β-sitosterol, however, and no stigmasterol was discovered. Furthermore, the sterols content was the biggest in double-low removed seed skin and coldly extracted oil; seeondary in removed seed skin and coldly extracted oil and the minimum in the general refined oil. Of all the three species analyzed, the content of the β-sitosterol was maximum.
