海藻酸钠固定化谷氨酰胺转胺酶稳定性的研究

摘要 研究了利用海藻酸钠固定化谷氨酰胺转胺酶的过程中戊二醛浓度、酶浓度对酶活的影响,并对固定化酶的性质进行了探讨。实验结果表明,当戊二醛浓度为1.0%、酶浓度为20%时,酶活回收率为37.8%,固定化酶的pH稳定性、热稳定性、操作稳定性及贮存稳定性都比游离酶显著提高。 A method is proposed to transgluminase with calcium alginate. of glutaraldehyde concentration concentration of transgluminase mmobilization are analyzed immobilize The effects and the on and the the characteristics of the immobilized enzyme are discussed.Experiments show that the recovery rate of transgluminase could be as high as 37.8% when 1.0% glutaraldehyde and 20% transgluminase were used. The stabilities of the immobilized enzyme against pH value and heat, its operational stability and storage stability were obviously higher than those of native transgluminase.
