摘要
研究了利用海藻酸钠固定化谷氨酰胺转胺酶的过程中戊二醛浓度、酶浓度对酶活的影响,并对固定化酶的性质进行了探讨。实验结果表明,当戊二醛浓度为1.0%、酶浓度为20%时,酶活回收率为37.8%,固定化酶的pH稳定性、热稳定性、操作稳定性及贮存稳定性都比游离酶显著提高。
