摘要
综述了国内外食品非热力杀菌技术,重点介绍了超高压杀菌、高压脉冲电场杀菌、脉冲强光杀菌、微波杀菌、紫外线杀菌、臭氧杀菌、二氧化碳技术、生物防腐技术等非热力杀菌技术的原理、特点及其在食品工业中的应用,这些技术有望取代部分惯用的食品热力杀菌技术。
The article reviews several non -thermal sterilization methods in food industry in China and abroad and especially introduces the sterilization principles and characteristics of ultra -high pressure, high voltage pulsed electric fields, high pulsed-light treatment, ultraviolet radiation, 03, pressurized carbon dioxide and biological antisepsis technology. The technologies mentioned above are expected to replace some thermal sterilization methods commonly used.
