摘要 对超声降解多糖进行了综述,详细介绍了超声在纤维素、淀粉、壳聚糖、真菌多糖等方面的应用研究,提出超声降解多糖领域目前的研究仅仅局限于各因素对多糖降解效果影响的宏观层面问题上,指出今后应着重微观机理的研究,探明超声降解多糖生物大分子键断裂机制和自由基反应机理,建立相应的物理数学模型。 A review was made on the latest research advances of polysaccharides degraded by ultrasonic. Researches in ultrasonic treated cellulose, starch, chitosan and polysaccharides of fungi were introduced. Promising application fields and expected development were predicted.
