摘要
以RVA快速粘度分析仪结合感官评定研究了葡萄糖酸内酯(GDL)对牛乳的凝固作用,并对影响葡萄酸内酯凝固牛乳的因素进行了研究,为GDL在乳制品加工中的应用提供了理论依据。同时也为快速粘度分析仪(RVA)在凝胶体的物性检查方面进行了新的尝试。
The influence factors of milk coagulation with glucono-delta-lactone were studied using RVA combined with sensory assessment. The basic theory to apply glucono-deha-lactone in milk was discussed and applying RVA to check the physical properties of gel was also proposed.
