甜菜颗粒干粕与甜菜渣提取果胶的比较研究 被引量:3

摘要 分别以甜菜颗粒干粕和甜菜渣为原料,采用酸法萃取,乙醇沉淀工艺提取果胶。在相同的条件下,甜菜颗粒干粕的果胶产量比甜菜渣的果胶产量高28.7%~42.8%,甜菜颗粒干粕提取果胶的最高产量比甜菜渣提取果胶的最高产量高23%,产品的各项质量指标均与甜菜渣提取的果胶相近。甜菜颗粒干粕提取果胶的最佳萃取条件为:pH1.5、温度80%℃、时间6h,较甜菜渣提取果胶的最佳萃取条件(pH1.5、温度85℃、时间6~8h[1])温和,而且产品色泽明显好于甜菜渣提取的果胶。 Acid extraction and ethanol sedimetary method were used toextract pectin from dried beet pellet and beet residue respectively. Theresults showed that the quantity of pectin extracted from dried beet pelletwas 28.7 to 42.8%, higher than that from beet residue under the sameconditions.The highest pectin quantity of dried beet pellet was 23%,andquality index of both products were equal. The optimum extraction from driedbeet pellet was pH 1.5, 80℃,for 6 hours which was milder than those from beetresidue (pH1.5, 85℃ for 6~8 hours).
