摘要
蛋白质是人类生命活动不可或缺的营养物质,是供给足够能量维持健康的重要条件。综述了近几年来动物、植物及微生物来源蛋白质的营养价值。
Protein is an essential nutrition matter that without it people in the world can not live. It provides enough energy to keep healthy. In this chapter we conclude the nutritional value of protein from different sources such as animal, plant and microbe.
