摘要 选料严谨是中国烹饪的一大特色,而在众多的烹饪原料中,油脂是较为特殊的一员,油脂可以作为传热介质、增色剂和调香剂等,同时由于其独特的性质,油脂对人的嗅觉、味觉、触觉具有特殊的关系,从而对菜肴风味产生很大的影响。因此研究油脂对菜肴风味的影响具有很高的实用意义。 The rigorous attitude in choosing cooking ingredients is an extraordinary characteristics for Chinese. Fat is a quite specific one among numerous cooking ingredients, as it is not only plays a role as a medium of heat conduction, color-adding agent, flavor-adjusting agent and so on, but also has specific relation to the smell, taste and tactile sensations of human being because of its distinctive character. Viewing this, we say fat can exert great influence on dish flavor. For this reason, the study on the influence of fat on dish flavor is of great practical significance.
