海鳗鱼鳔营养成分分析及鱼鳔营养液的研制 被引量:8

摘要 以海鳗鱼鳔为原料,对其营养成分进行分析,并利用其制备鱼鳔营养液。实验结果表明:海鳗鱼鳔的粗蛋白含量高达24.63%,呈味氨基酸(谷氨酸、甘氨酸、天门冬氨酸、丙氨酸)占氨基酸总量的52.5%,其中甘氨酸含量占氨基酸总量的23.4%;维生素E含量高达1.52 mg/100 g,Ca含量为13.25 mg/100 g,Fe、Zn也较丰富;鱼鳔经65℃低温浸提制得鱼鳔胶,通过正交试验确定海鳗鱼鳔营养液的最适配方,即每100 g鱼鳔胶添加75 g中药提取液、4 mL黄酒及15 g冰糖,以此制得的营养液中粗蛋白含量高达5.87%,色泽、风味、口感较好。 The food nutrient compositions were analyzed in the swim bladder of Muraenesox cinereus and its nutrient liquid was prepared with the swim bladder. The results indicated that the content of protein was 24.63 % and flavor development amino acids such as Glu, Asp, Ala and Gly accounted for 52.5 % of all amino acids, of which the content of Gly accounted for 23.4%. The content of vitamin E was high up to 1.52 mg/100g and the content of Ca was 13.25 mg/100g. Other minerals such as Zn and Fe were rich too. After being extracted at a low temperature as 65℃, the swim bladder gel was prepared, The result of orthogonal experiment indicated the optimum proportion of nutrient liquid of the swim bladder was that 100 g gel mixed with 75 g extraction from Chinese medicine and 4 mL yellow wine and 15 g rock candy.The content of protein in nutrient liquid was as high as 5.87% and its colour and flavour were good.
