摘要
对大叶紫薇果仁蛋白质与氨基酸进行了研究,测得果仁粗蛋白的含量为10.2%,其蛋白质组成为:清蛋白3.31%、球蛋白1.43%、醇溶蛋白2.09%、谷蛋白1.54%;含有18种氨基酸,其中有营养必需的8种氨基酸.并根据模式蛋白质,应用化学分析法对果仁蛋白质营养价值进行了评价。
Protein and amino acid contents in seed of Lagerstroemia speciosa were studied. It was found that the content of proteins was 8.54%. The compositions of protein were albumin (3.31%), globulin (1.43%), alcohol soluble protein (2.09%) and glutelin (1.54%). Seed of Lagerstroemia speciosa contains 18 kinds of amino acids, of which 8 kinds are essential amino acids. The nutritive value of the protein was evaluated by the method of chemical analysis basing on the model protein.
