木薯是热带地区碳水化合物的主要来源。木薯根的化学组成、淀粉含量、淀粉质量和淀粉性质常常决定木薯作为食品和工业用的价值。主要介绍了木薯,重点是木薯中变性淀粉在纺织、造纸、建材、农业、轻工、食品、医药等行业中的应用情况。并对培育和发展木薯产业提出一些建议。
The Cassava is is a main source of the tropical regional carbohydrate. The chemical composition of the Cassava root, the content of starch, starch quality and starch nature often determine the food and industrial value of Cassava. The sex change starch of the Cassava apply to such each tradeas textile, papermaking, building materials, agriculture ,light industry,food, medicine, etc. extensively. And to provide some suggestions of development the Cassava industry.
