摘要
对25种观赏花卉天然红色素的研究进行综合阐述，总结出红色素的主要理化性质和提取、精制工艺，为天然食用色素中的红色素开发利用提供新的来源。
This article discusses research advances of 25 kinds of natural red pigment from ornamental flowers, obtains the main physical and chemical properties of the red pigment, and the eraftwork of extraction and refinement for exploitation.To provide new source for the red pigment develoment and use of natural food pigment.
