摘要
糯米是中国古代祭祀的必需品;人们日常的主食,又是军队行军或旅行的干粮;同时糯米更是酿造黄酒的主要原料。此外,还是日常生活用品的原料和建桑用的材料。随着工业社会取代农耕社会,糯米的用途渐趋缩小。地位由兴转衰。但糯米作为传统饮食文化的特色是不会消失的,有迹象表明,近年来糯米的种植面积和消费已迅速回升,显示它在饮食文化中不可取代的地位。
Glutinous rice in ancient China was used to offer sacrifices to gods and ancestors; it was people's daily main food and prepared as solid food for troops march or travel. Meanwhile, it was the only material for making the famous Yellow Wine. Besides, glutinous rice was also im- portant articals for daily use and materials for building. Owing to the replacing of industrializing society with traditional agricultural society, the use of glutinous rice became less and less. But some signs point to a turn for the better, as the planting area and the consume of glutinous rice are rising again, it shows that glutinous rice is unreplaceable in the Chinese Diatary Cuture.
