春节“团圆宴”之餐饮文化现象研究

摘要 “团圆宴”是华夏民族过年中不可缺少的饮食活动,但它又不同于一般的饮食活动,因为它已经超出了一般意义“吃”的范畴,它在数千年的历史发展中已经上升为一种以文化蕴涵为中心内容的民俗文化娱乐与精神审美活动。确切地说。“团圆宴”是过年中人们借助饮食活动来表达华夏民族群体文化心理的一种方式。因此,我们说“团圆宴”首先是年节文化的载体,它承载的是数千年华夏民族“年文化”的文明积淀与文化蕴涵。从这个意义上说,现今的酒店、餐馆仅仅靠几样关味佳肴,或者说是靠一定的烹饪技术就可以展示“团圆宴”的无限魅力,那几乎是不可能的。这就难怪人们在酒店、餐馆里过年吃“团圆宴”,并不是一直等到除旧迎新的那一刻到来的原因所在。所以,从商业意义的角度而言。如何在酒店、餐馆里把传统的“团圆宴”运作成为一个颇有市场诱惑力和影响力的餐饮品牌,并通过大家的共同努力最终把“团圆宴”打造成为富有华夏民俗文化色彩的“圣诞大餐”,就成为餐饮业界的一个重大课题。 "reunion dinner " is the indispensable diet activity in the nationality of China celebrates in New Year, hut it is different from the general diet activity, because it already gone beyond the category that the general meaning " eaten ", it has already increased to one that contain the folk custom entertainment and spirit aesthetic activity with culture in the historical devdopment of thousands of years. To be precise, " reunion dinner " is a way of psychology through diet activity in celebrating the New Year, people make use of this way to come and express China national colony culture. So, we say that " reunion dinner " is the carrier of culture of the Spring Festival holidays at first, what it bore the weight of is that " year culture " civilization accumulation and culture of nationality of China contained in thousands of years. In this sense, the hotel, restaurant of now only depend on several kinds of delicious food, or show the limitless glamour of " reunion dinner " by certain cooking skill, that is almost impossible. This is the reason that people take " reunion dinner " in hotel and restaurant, wait until except that time of old when saw the New Year in. So, as regards angle of the commercial meaning, how to make the traditional operation of " reunion dinner " become a quite popular temptation and meal drink card of the influence power in the hotel and restaurant business, play and cause for " christmas dinner " rich in color and - folk custom of China instead oh the " reunion dinner " through joint efforts of everybody,finally become a great subject of food and beverage industry.
