活性炭对桃胶水解液的脱色研究 被引量:11

Effect of active carbon on decolorization of peach gum hydrolysate

摘要 商品桃胶是我国特有的产品,已广泛应用于食品、化工、化妆品、印染等行业。桃胶生产过程中由于美拉德反应等因素易造成桃胶水解液颜色加深,影响了产品质量。实验采用正交试验法,以脱色率为主要指标,对桃胶水解液的活性炭脱色工艺中的温度、pH值等进行了研究。结果表明:在最佳工艺条件下,即在60℃下、pH4.0、加入1.5%活性炭、搅拌30min进行脱色,脱色率可达79%以上。可用于工业化生产商品桃胶的工序。 The peach gum was an especial product in China, and it had been used in food, chemical, cosmetic, printing industry and so on. The process of hydrolysis was liable to produce some colorful things because of Maillard reaction, so it affected the quality of products. The paper aimed at studying on decoloration of peach gum hydrolysate with active carbon, and the optimum conditions were selected by orthogonal design with discoloration ratio as index. The results shows that the optimum conditions were 60℃ solution temperature, pH4.0, 1.5% amount of active carbon, and 30min process time. More than 79% of the discoloration ratio was obtained at the optimum conditions.
