摘要
对邻苯三酚自氧化法测定植物食品原料中SOD的条件及影响因素进行了研究,确定了样品的快速处理方法和测定体系,对有效利用植物食品资源,开发SOD功能性食品具有实际意义。
To study the condition and the influencing factor in testing SOD in vegetable food ingredient by the way of Pyrogallol self-oxidation, and determine a rapid sample treatment method and testing system, which are of practical significance to make efficient use of vegetable food resources and to develop SOD functional food.
