摘要
通过对69家路边饭店的食(饮)具消毒现状调查,多数饭店卫生管理制度不落实,有89.5%的饮食从业人员不懂食(饮)具洗刷、消毒、保洁等卫生知识,在同一水池内洗肉、洗鱼、洗菜后再洗刷食(饮)具,交叉污染严重,且保洁措施不全,食(饮)具卫生细菌学检测,总合格率仅占40.99%。
By checking the disinfectant situation in 69 restautants along the high way,it was found that the hygienic regulations couldnt be put into effect in most of the restaurants.89 5% of their workers were not aware of the knowledge of washing,keeping tableware clean,and disinfection.They washed fish,meat,and vegetable in one pool,and after that they wash the tableware in the same pool.Therefore intersecting pollution was very serious,and measures of keeping clean were not complete.The result of bygienic bacteriology examination showed that the total qualified rate was merely 40 99%.It suggested that the hygienic control work of disinfection with tableware in these restaurants should be strengthened.
