摘要
将新鲜蕨菜磨浆均质后,添加到挂面配方中,可使挂面色泽诱人,营养价值提高,达到食疗同源的营养保健效果。实验结果显示:最佳配料组合为A2B3C3D3,即蕨菜10%,食盐2%,CMC0.4%,鸡蛋6%。
Put the pulp of Pteridium aquilinum into the dry noodles processing, the result had shown that the dry noodles were delicious and nutritious with fresh colors, and could give us the nutritious and curative effect at same time. The result showes: the better composeis A2B3C3D3, that is pteridium aquilinum. L 10%, salt 2%, CMC 0.4% ,egg 6%.
