摘要 木聚糖酶为分子量在8~30 kD间的碱性蛋白酶,具有反应最适pH和温度范围大等性质,广泛应用于食品、饲料、造纸等多个领域。在酿酒过程中,可利用木聚糖酶来提高淀粉酶的活力,提高酒精产率;木聚糖酶还可用来提高酒液的的澄清度,分解半纤维素生产酒精;同时可利用酒糟生产木聚糖酶作为酿酒酶制剂。 Xylan enzyme, as alkaline protease with its molecular weight between 8~30 kD, is widely used in the field of food, feedstuffand paper-making etc. due to its great adaptability in pH and temperature. It could be applied in liquor-making industry to improve the activity of amylase, increase alcohol yield: and enhance liquor clarity. Besides, it could be used to decompose hemicellulose to produce alcohol. And distiller's grains could be used to produce xylan enzyme as liquor-making zymin.(Tran, by YUE Yang)
