摘要
为了开发一种新的天然黑色素来源,本文研究了从黑木耳中提取黑色素的方法、理化性质和稳定性。实验结果表明,黑木耳黑色素的提取方法简便,易溶于PH值大于9的碱溶液;在碱性环境下,色素对热、光和金属离子、食品添加剂稳定性较好;氧化剂(H_2O_2)和还原剂(Na_2SO_3)对其有一定影响。
The paper studied the method of extracting melanin from auricularia, physiochemlcal properties and stability , in order to exploit a new kind of natural melanin resource. This experiment has proved that it is very simple to extract melanin from auricularia easily dissolves in aqueous alkali( PH 〉 9). Under the condition of alkaline , the pigment is sufficiently stable to heat, metal ion and food additives, affected by H2O2 and Na2SO3.
