摘要
将湿冷与臭氧技术应用于金柑的贮藏保鲜,根据保鲜效果筛选出最佳保鲜方法及工艺。结果表明,金柑采用湿冷与臭氧技术保鲜,总体效果明显好于常温贮藏。其中采用聚乙烯薄膜袋开口保鲜的贮藏期为123d,失水率为6%,好果率为74.2%,鲜食风味足、质地好,无污染,可为商业化生产提供较好的理论和实践依据。
The paper studied the application of humudicool combined and ozone technology for the fortunella keeping fresh. Results showed that the general storing effect in the humudicool and ozone condition was better than in nominal temperature condition. With the application of unsealed PE packaging, the rates of fruit weight loss and good fruit were 6% and 74.2% respectively, the flavour and texture of fruit were still good after 123 days.
