介绍了水果提取法、化学合成法、生物发酵法3种柠檬酸的生产方法以及传统生产工艺。详细阐述了目前国内外在开发柠檬酸生产的新原料、改进生产工艺及提取工艺等方面的进展情况,并对各种技术的原理、优缺点、应用等方面进行了论述和比较。
