摘要
以捏合机为反应器,研究制备非晶颗粒态淀粉的新方法。将淀粉与水分按不同比例混合并在高温下反应,用偏光显微镜观测处理后的淀粉颗粒结构。结果表明,当淀粉与水分质量比为3∶6时,温度80℃维持30min,90%以上的原玉米淀粉多晶颗粒态转化成无定形结构的非晶颗粒态。
A kneading device was used as a reactor to study a new method for preparation of starch with non - crystallized granule state. Starch and water were mixed in different ratio and react under high temperature. The particle structure of treated starch was observed hy a polarizing microscope, The results showed that the crystal structure of more than 90% original corn starch particles was converted into amorphous non - crystal granular state when the mass ratio of starch and water was 3:6, the temperature above 80℃ was kept for 30 min to maintain the original corn starch.
