摘要
本文以苦荞和甜荞籽粒的乙醇提取物为研究对象,在测定其提取物中总酚酸含量的基础上,利用体外法研究了荞麦提取物的还原力,对Fe2+的络合能力,对DPPH自由基的抑制作用以及对羟基自由基的清除作用。结果表明,5个品种的荞麦乙醇提取物均有显著的抗氧化性,呈剂量效应关系,酚酸含量、还原能力、抗氧化能力之间呈正相关。
The total phenolics, reducing power, metal chelating activity, DPPH radical scavenging activity, along with hydroxyl radical scavenging activity of the ethanol extracts of five buckwheat groats were studied. The results demonstrated that all tested buckwheat extracts showed very good antioxidant activity with dose-effect dependent, and the positive correlation among the content of total phenolics, reducing activity and antioxidant activity were also observed.
