摘要
为了明确盐分对小麦籽粒蛋白质及其组分含量的影响,分析了3种不同盐分含量的土壤上小麦籽粒蛋白质及其组分含量的动态变化。结果表明,随着土壤盐分浓度的增加,小麦籽粒蛋白质含量提高,表现为S3(土壤盐分含量1.6129 g/kg)>S2(土壤盐分含量1.2656 g/kg)>S1(土壤盐分含量0.674 g/kg);小麦籽粒蛋白质积累量随盐分浓度的提高而下降,S2与S1处理间籽粒蛋白质含量和积累量差异均达显著水平,S3与S2和S1间差异均达极显著水平。盐分胁迫条件下小麦籽粒蛋白质含量呈高-低-高的“V”型变化,与正常生长条件下蛋白质含量的变化动态一致。小麦籽粒蛋白质各组分含量随土壤盐分浓度的增加而增加,各处理间的清蛋白、球蛋白、醇溶蛋白、谷蛋白含量差异均达显著或极显著水平。从各组分占总蛋白的比例来看,清蛋白、球蛋白、谷蛋白的比例随着土壤含盐量的增加而下降,醇溶蛋白的比例则随土壤含盐量的增加而增加,谷/醇比随着土壤含盐量的增加而下降。
The relationship of soil salinity content with grain protein and its component contents and accumulation amounts in wheat was analyzed. The results indicated that grain protein content increased with the rising of soil salt content, while protein accumulation amount in grains decreased. The difference of grain protein content and accumulation amount between S1 and S2 treatments was significant, while the differences between S3 and S1, and between S3 and S2 were very significant. The content of each protein component increased with soil salt content. The difference on contents of albumin ,globulin glutenin and gliadin among 3 soil salt content treatments was significant or very significant. The ratio of albumin, globulin and glutenin contents to protein content decreased with rising of soil salt content, whereas the ratio of gliadin content to protein content increased.
