青海省海西地区传统发酵山羊乳中乳酸菌的分离及鉴定 被引量:9

摘要 从采自青海省海西地区牧民家庭的11份以山羊奶为主要原料的传统发酵乳中分离得到33株乳酸菌,经过形态特征,生理生化特性,糖发酵试验和乳酸旋光性的测定,将这33株乳酸菌初步鉴定为7株L.delbrueckiisubsp.Lactis,4株L.delbrueckiisubsp.bulgaricus,3株L.acidophilus,1株L.coryniformissubsp.corynformis,12株S.thermophilus,Ped.acidilactici3株,Ped.Urinaeequi2株,Leu.mesenteriodessubsp.mesenterriodes1株,其中,杆菌占所分离菌株的45.45%,球菌占所分离菌株的54.55%。 Based on morphological, physiological and biochemistry analysis, 33 trains of lactic bacteria were isolated and identificated from 11 samples of traditionally fermented goat's milk collected from individual households in Haixi region of Qinghai. They were identificated as follows: 7 strains of L.delbrueckii subsp.Laais, 4 strains of L.delbrueckii subsp.Bulgaricus, 3 strains of L,acidophilus,1 strain of L.coryni)brmis subsp corynformis, 12 strains of S. thermophilus, 3 strains of Ped.Addilactici, 2 strains of Ped, Urinaeequi, 1 strain of Leu.Mesenteroides subsp. Mesenteroides . Among these lactic acid bacteria, the percentage of rods was 45.55%, the coccus was 54.45%.
