摘要
烹饪人才的稀缺成为包括浙中地区在内的餐饮业发展的瓶颈,要突破瓶颈的制约,必须大力发展烹饪教育。本文比较烹饪教育发展,从餐饮市场、本地经济发展角度对当前烹饪高等教育现状进行了分析,探讨了浙中地区烹饪高等教育发展面临的机遇和挑战,并进一步提出了浙中地区烹饪高等教育人才培养目标的定位。
It has become a bottleneck of catering trade development not only in the central region of Zhejiang Province for being short of cuisine talents. We should develop much in order to overcome the difficulty. The paper compares the Chinese and foreign cooking education development, and discusses the present situation from the angle of local economy, analyzing opportunities and challenges as well. In addition, it sets the cuisine talents' training target of Higher Education in mid-Zhejiang Province.
