摘要
以三聚磷酸钠为磷酸化试剂,在干法反应条件下对小麦原淀粉进行磷酸酯化反应(玉米淀粉作对照),测定制得的样品的交联度,并进行正交实验和方差分析,最终得到干法制备具有较高交联度的磷酸化淀粉的最佳实验条件如下:pH值10.0,反应时间2h,反应温度100℃,磷酸盐的用量为淀粉干重的0.6%。
The wheat starch phosphate ester was prepared by dry method with sodium tripolyphosphatc (corn starch as a comparison experiment),and its erosslinking degree was measured. The optimized condition is obtained by orthogonal experiments and analysis of variance(AOVA) as follows:pH of solution 10.0,reaction time 2 h,rcaetion temperature 100 ℃ and ratio of pyrophosphate to stareh(db) 0.6%.
