摘要
本文简要阐述了超声技术的基本原理和特点,并着重阐述了国内外近几年来超声波技术在肉品、乳品、蛋品中的应用,从动物性食品加工,品质检测等方面较为全面地综述了超声波技术在动物性食品行业中的最新应用研究进展情况并探讨了其发展趋势。
In this paper the author summarizes the basic principle and the characteristics of ultrasonic technology.Recent advances in the use of ultrasonic technology in livestock products that include meat product ,dairy products and egg products are reviewed. There are includes the techniques of processing and quality inspection,and summarized the problems in the studies of this field,Future development of ultrasonic technique and its application are also prospected.
