摘要
通过用乙烯吸收剂吸收贮藏环境中乙烯的方法,研究了火柿果实成熟软化过程中乙烯对果肉硬度、呼吸速率、PE活性、PG活性和CX活性的影响,探讨了果实软化的机理。结果表明,乙烯吸收剂处理能有效地清除贮藏环境中的乙烯,降低果实的呼吸速率和乙烯释放速率,抑制PG、PE和CX的活性,有效地延缓果实硬度的下降速率。乙烯在柿果实软化衰老中起着主导作用。
The effect of ethylene on the firmness, respiration rate, PE activity, PG activity and CX activity in post harvested "huoshi" persimmon fruits is studied by using ethylene absorbent in the storage environment. The fruit softening mechanism is discussed. The result showed that ethylene absorbent can effectively eliminate ethylene in storage, reduce respiration rate and ethylene releasing rate, restrain PG activity, PE and CX activity; thus delaying the descending rate of fruit hardness. It also follows that ethylene plays an important role in the process of persimmon fruit softening.
