摘要 研究了纤维素酶和木聚糖酶单独处理及结合处理对酶法去淀粉和蛋白质后的玉米皮膳食纤维(DF1)的组成、溶胀性、持水力和持油能力的影响,并确定了适宜的酶解条件。 The effects of cellulase and xylanase on composition, swelling capacity, water ho capacity and oil binding capacity of a kin dietary fiber (DF1) extracted from corn the Iding d of bran through amylases and proteinase method were studied. The hydrolysis conditions for cellulase and xylanase were optimized, respectively.
