摘要 胰蛋白酶抑制剂(TI)是甘薯块根中一类特殊贮藏蛋白,该文从甘薯块根中TI组成分布、提取纯化、活性及影响因子、TI与蛋白含量相关性和TI功能性等方面对国内外有关TI研究进展进行综述。 Trypsin inhibitor is a kind of special storage proteins that are expressed in the root tuber of sweet potato. The present paper reviews recent researches on TI in the world, including their composition and distribution, extraction and purification, trypsin inhibitor activity (TIA)and functional activity .
