毛竹笋与常用蔬菜的矿质元素含量比较研究 被引量:3

A Comparison of Mineral Nutrition Composition of Bamboo Shoots of Phyllostachys heterocycla var. pubescens and That of Some Common Vegetables

摘要 通过比较毛竹笋与30多种其它常用蔬菜的矿质元素含量,发现在毛竹笋的K、M n、Zn等三种矿质营养元素含量在蔬菜中名列前茅,N a、Cu、P含量居中等水平,而C a、M g、F e、Se等元素含量则相对较低,从而为毛竹笋的合理膳食利用提供了依据。 The mineral nutrition composition of bamboo shoots of Phyllostachys heterocycla var. pubescens was compared with that of more than 30 kinds of common vegetables. The results showed that its concentrations of K, Mn and Zn were at the top of the list. Its concentrations of Na, Cu and P were at the medium level. While its concentrations of Ca, Mg, Fe and Se were relatively low. This may provide a basis for the scientific diet of bamboo shoots of Phyllostachys heterocycla var. pubescens.
