茭白自发气调贮藏过程生理及相关酶活性的变化 被引量:8

摘要 本文研究了自发气调(MA)贮藏条件下茭白肉质的采后生理及相关酶活性变化.结果表明:MA贮藏可明显抑制CX(纤维素酶)的活性,同时抑制茭白肉质的呼吸强度和乙稀释放,延缓膜相对透性升高,但MA贮藏对茭白肉质可溶性固形物含量无显著影响. In the paper, the effect of MA storage on respiration, ethylene production, flesh firmness ,relative membrane permeability, total soluble solid and activities CX of Were studied. The results showed that MA storage significantly inhibited CX (cellulase) activities, decreased the respiration rate and the ethylene production ,delayed the respiration peak and the ethylence peak, and showed down the decrease in the flesh firmness and the increase in the relative membrane permeability. However ,there was no remarkable effects of MA storage on the total soluble solid. There is a potential application of MA storage in the Zizania latifolia.
